Breakfast In A Rice Cooker? SAY WHAT??? #RiseAndShine

Okay I know you are looking at me like I have 3 heads but I am serious! Even I had my reservations on this because I make my husband a giant omelette every day before he goes to work and I didn’t want to mess that up. But I gave it a whirl and took the Panasonic #RiseAndShine Better Breakfast month challenge and made breakfast in the Panasonic SR-DF101 Rice Cooker that was sent to me to try out.

As someone who actually loves Chinese food, I really wanted a great rice cooker to make my yummy sticky rice for me so I was thrilled. And then to learn I just touch a button to get it working? HELLO EASY! This particular model even has a button for porridge, or in my world, Oatmeal. You can set and and walk away and it will cook it for you! It has setting for both brown and white rice which is nice and also a warming button. Very versatile, I love it! And because it can hold up to five cups of rice, it is my largest capacity cooker.

For hubby I made him a frittata. Yes, this means steamed eggs people. I basically just sprayed the rice cooker, poured in the eggs and added veggies and salt and pepper, then put the steamer basket on top with a few smoky links. closed the lid, hit the porridge button and 15 minutes later breakfast was done. DONE! It was well received for how different the cooking method was and he said the only change would be to add shredded cheese right in the eggs. I, too, was shocked that I could make hubs a pretty complete meal in a rice cooker!

Veggie Frittata in Rice Cooker

4-6 eggs, well beaten

1/2 C. fresh veggies chopped (I use shallot, peppers and tomato;if you have leftover veggies from a saute use em!)

Salt and Pepper to taste

1/2 tsp. Olive Oil, optional

extra: breakfast meats

There are only 3 steps to this one: Spray your rice cooker with cooking spray. I like olive oil flavor so I added a few drops to the pan too.

1. Add the eggs, veggies and salt and pepper to the pan.

2. Put your meat in the steamer basket if you are having some

3. Hit the PORRIDGE button on the rice cooker and walk away.

About 15 minutes later there was a frittata!

Hubby liked that they were more fluffy than normal and I told him it was the steam 🙂 So how about that…breakfast in a rice cooker!! I am a believer now 😀
