Hungry Jack has released a new Easy Pack pancake mixed called Stars and Stripes Funfetti and Hungry Jack asked me to try it! I love pancakes and these particular ones are the brand my kids and husband like to make when I am gone and didn’t leave them mix from scratch. They know they just add a cup of water and go 🙂
Just in time for the 4th of July, these pancakes pack a nice colorful punch with each bite, and the red, white and blue confetti makes them the perfect addition to Independence Day celebrations!
For this little taste test I decided to make homemade Blueberry Syrup to go with the pancakes, it just seemed perfect! The recipe is easy, 3 ingredients, minimal steps. - 1 qt. Fresh Blueberries
- ⅓ to ½ C. Sugar (you can add more if ⅓ isn't sweet enough for you)
- 3 TBS Fresh Lemon Juice
- Place ingredients in small saucepan and heat on medium until the berries start to burst open, then lower the heat and continue reducing the mix until most of the berries have opened.
- Run the berries through a fine mesh chinois (strainer) and squeeze out the berry goodness until you can't anymore. Transfer to serving carafe.
