Vanilla Cream Cheese Mousse and Chocolate Ganache Filled Strawberries

 

I’d been under a challenge, secretly, myself and some other bloggers are challenging each other to come up with new recipes. I didn’t want to just dip Strawberries in chocolate so I had to rack my brain. So today, on Memorial Day, I created a no bake no stove needed recipe. Ladies and gents, get your strawberries ready. It’s time for you to meet some delicious filled strawberries!

It goes without saying that your choice of strawberries is imperative. You don’t want those weird ones that are wide you want round ones, red, and smaller ones hold up better…

I got lucky and got a good batch but really should have got 2 quarts so I could make more!

What You Need:

2 Quarts Strawberries, hulled and cored (be careful taking the centers out!)

1/4 C. Heavy Cream

1 pkg cream cheese, softened

1/3 C. Powdered Sugar

2 TSP. Vanilla

Ganache: 1 C. Chocolate Chips melted with 2 TBS Butter and 2 TBS Heavy Cream

How to do it:

Once your strawberries are cored, beat together your cream cheese, sugar, vanilla, and powered sugar, adding the cream in slowly. Let this mixture blend together for a good 3 or 4 minutes. You are looking for a consistency like a yogurt but not too airy. Not dense like frosting.

Melt the chocolate chips and butter in the microwave for one minute and then add the cream, use a whisk and make it glossy and pretty!

Grab 2 decorating bags and fill one with your chocolate and the other with your mousse. Snip the ends off, no tips needed.

To fill them, use the mousse first and turn the strawberry on its side and fill it half way with the mousse. If you want your strawberries to go vertical like mine just cut the bottoms off level. The ganache is thinner so you want that heavier mousse to be there first to hold up the chocolate. Add your chocolate. Use as much or as little as you want. You can get even fancier than I did and use a toothpick to swirl the colors.

Wondering how I made the chocolate design on my plate? I used a parchment paper pastry bag with a tiny hole and used the ganache to pipe the design 🙂 i used a paper half the size to make a mini bag.
