The mercury is rising fast here in Michigan and since I don’t want to heat my house up past 100 degrees, I felt like making a super easy fruit salad recipe, perfect for any summer parties! Also perfect for summer entertaining is the limited edition Rubbermaid Pitcher in Calypso Coral and Rubbermaid party platter in Lagoon Blue, though both products are available in both colors. With a graduation open house looming, these two items were the perfect addition to my party arsenal! These great Rubbermaid products are also available at any Kroger banner store location.
I headed to my local Kroger to pluck these beauties..
The color of the pitcher is bright and fun which I love, it hold a gallon. I made strawberry lemonade, which was perfect because its hot and muggy today and the kids are going to drink it right down.
I’ve had the platter before but not in the Lagoon Blue color, again, I am a color lover and this is just pretty! The platter has a center cup that has a lid so you can just take out the dip and refrigerate. Super easy for cleanup!

Summer Fruit Salad with Honey Lime Dressing
8 cups fresh fruit –
Mandarin oranges in juice, drained
Pineapple chunks, drained OR use fresh
Combine all the fruit in large bowl, leaving the raspberries out..
Combine these ingredients:
1/2 tsp. Lemon zest
1 tsp. Lime zest
1/4 C. FRESH lime juice, or juice of one medium lime
4 TBS honey
Add the dressing to fruit, then add the Raspberries (they are fragile we don’t want to over-toss them) and toss. Refrigerate for a few hours but it still tastes good right away too.
