When I was invited to attend the Winter Fancy Food Show, I knew that I would have to offer up a recipe using the products made by the Mom Blog Tour sponsors. Generally, I have no problems coming up with recipes but this one was REALLY hard. I really had to go outside my comfort zone and experiment to find something that was great. Brazi Bites is a Brazilian cheese bread that comes in 4 flavors (3 Cheese Pizza, Garlic Asiago, Zesty Pepper Jack and Cheddar & Parmesan). It is gluten free and it cooks in the oven in just minutes. Having been to Brazil as a teenager and tasting cheese bread there, I was so eager to try this product at the show.
And then we got to meet the co-inventor Junea Rocha , who just happened to pitch this the people of Shark Tank and they got backing, which is great because I might never have been able to taste this amazing bread!
I do not usually post anything gluten free, I am a purist. I use real butter, sugar, real fats and real flour. I am not gluten intolerant. However, a couple people in my family are facing issues so I thought I would try and make a recipe that works for them. I came up with the pizza idea after tasting them at the show. I knew I would use them for the crust! In order to do this I had to take the frozen pieces and arrange them in a round vessel. THEN after they were cooked, I had to take the whole piece of connected Brazi Bites and flatten it. After that it was a matter of adding the toppings. I have tasted gluten free breads and even pizza before and they were all gross. Because Brazi Bites took the time to get the perfect Tapioca flour mix, and nothing artificial in them makes these bites have “chew” to them, the very texture of actual bread, which makes them perfect for a pizza crust!
Gluten Free Pepperoni Pizza
1 bag of 3 Cheese Pizza flavored Brazi Bites
1/2 C. Pizza Sauce
1 C. Mozz cheese, shredded
- Preheat oven according to Brazi Bites directions. Place frozen Brazi Bites in round pan, keeping them close together. Bake according to directions.
- Remove bites in one piece and place on parchment paper. Put another piece of parchment paper over the top of them, and then press on the mass to flatten the bites into a disc shape. Trim a few sides if you want a perfectly round shape. I went for rustic.
3. Place flattened bites on pizza pan, then spread the pizza sauce, cheese and pepperoni (or skip the pepperoni and make it vegetarian!)
4. Bake at 400 degrees F until cheese just starts to brown, 6-10 minutes.
