Sweet Potato Pie


This is the first year ever that I attempted Sweet Potato Pie. I wanted to add something new to the Thanksgiving lineup and was wanting to try this pie for a while. It is so easy too, only boiling the sweet potatoes is the lengthy part. The rest is just like a pumpkin pie recipe. I just ate the last piece of the pie before I started typing this, and according to my family, the pie was a roaring success! I didn’t have a pie plate left to bake in so this pie turned square 🙂

Sweet Potato Pie
Serves: 8
  • 1 pound sweet potato
  • ½ cup butter, softened
  • 1 cup white sugar
  • ½ cup milk
  • 2 eggs
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 2 teaspoon vanilla extract
  • 1  unbaked pie crust (9 inches)
  1. Boil sweet potato whole in the skin for about an hour, or until done and fork tender. Run cold water over the potato(es) until cool enough to handle. Peel potato.
  2. Using a fork, slightly mash potato in a bowl. Add butter. Using a mixer, mix well. Stir in eggs, sugar, milk, vanilla, nutmeg and cinnamon. Beat on medium until mixture is smooth; Pour filling into  crust.
  3. Bake at 350 degrees F  for 55 to 60 minutes, or until knife inserted in center comes out clean.
