Junior Mints Brownies and a Giveaway

I participated in Mom Blog Tour Winter Fancy Food Show (#MomBlogTourFF) on behalf of Wendy’s Bloggers. I received Two Rivers Coffee products to facilitate my review, but my opinions and the recipe are my own.

Okay, I know what you are thinking… Did I seriously put CANDY in a brownie recipe? The answer is yes but I also had another trick up my sleeve. This trick came in the form of an amazing little hot cocoa single-serve cup. Of all of the companies I got to meet at the Winter Fancy Food Show, Two Rivers Coffee was definitely my favorite. Getting to hear the back story of how the company was started in NYC and getting to meet the people behind it was a treat. No seriously, this company perfected the flavors of CANDY in their hot cocoa and coffees. Flavors include Junior Mints, Tootsie Roll, Charleston Chew and Sugar Baby! Two Rivers Coffee got together with Tootsie Roll Industries and worked hard to perfect the flavors, which of course made magical results if i do say so myself!

My favorite movie candy, Junior Mints, made into a hot cocoa? YES SIGN ME UP PLEASE! I knew I would be making something with this cocoa. I made cupcakes and they were fine but then I decided to try again with some brownies. I used the actual brewed cocoa in the brownies and then to add just a bit more punch, used the actual candy too! The recipe is made just like any brownies from scratch, only with the addition of melted down Junior Mints candies and the cocoa brewed from the single-serve cup, mixed right into the batter before baking.

Junior Mints Brownies


Soft butter, for greasing the pan

Flour, for dusting the buttered pan

4 large eggs

1 cup sugar, sifted

1 cup brown sugar, sifted

8 ounces melted butter

1 1/4 cups cocoa, sifted

1/2 cup flour, sifted

1/2 teaspoon kosher salt

1 small box Junior Mints candy

4 oz. prepared Two Rivers Junior Mints Hot Cocoa


  1. Preheat oven to 325 degrees F. Grease and flour 8X8 pan.
  2. Mix dry ingredients in medium bowl
  3. Brew cocoa in single cup brewer, set aside
  4. Melt candies in small saucepan, then add in hot cocoa and mix to combine, let cool.
  5. Add candy sauce then eggs.
  6. Bake at 325 degrees F for 45 minutes or until a toothpick inserted into center comes out clean. Cool brownies completely in pan before serving.

    I’d love to try the Charlston Chew flavored coffee. Growing up, this candy was my hands down favorite- I’d put them in the freezer and a whole bar would become 4 desserts! I would snap the bar into four equal pieces.
