Every Christmas we have a big family gathering on my husband’s side. And every year, someone brings a giant crock pot full of Scalloped Potatoes. I love them with ham in them but eat them meatless just as well. My own basic version of scalloped potatoes does well in the crock pot and is one of those recipes designed to be started in the morning and given a good 6 hours to cook. For this recipe I recommend a larger 6 Qt. crock pot [/one_half] [one_half last=last]
- 5 lbs. Potatoes, sliced (3 lbs. if you don't have a large cooker)
- 1 medium onion, sliced
- 1 pkg. Velveeta, cut into 1 inch cubes
- 2 C. Milk
- Salt and Pepper
- Add your potatoes, onion and cheese to the crock pot, then add the milk. You will want to have the milk go halfway up the crock pot so depending on the size, you may need more than 2 cups of milk.
- Add your salt and pepper (or any other seasonings or even meat), cover, and let cook on med-high until potatoes are tender and cheese sauce has thickened.
