Recently, Eggland’s Best Eggs challenged me to come up with a “Kid Approved” breakfast recipe using their eggs. As a LONG TIME buyer and lover of the brand I couldn’t resist. One of the best things about these eggs is the fact they are packed fresh and the boxes are designed to keep the eggs fresher. Also, compared to regular eggs, Eggland’s Best eggs have twice the amount of Omega 3-s which studies have found helps kids under 12 with concentration. My first thought was right to French Toast. I couldn’t just make regular french toast though, I had to get my chef on so I made Caramel French Toast! I was aiming for Creme Brulee toast but it didn’t turn out that way and I accidentally made caramel instead!
Caramel French Toast
1/2 cup unsalted butter
1 cup packed brown sugar
1 tablespoon corn syrup
6 slices of thick bread, I used an artisan italian loaf
5 Eggland’s Best eggs
1 cup heavy whipping cream
1 teaspoon vanilla extract
1 TBS orange extract
1/4 teaspoon salt
Melt the butter in a pan and then add the brown sugar and syrup, and stir until the sugar is almost melted. Pour the sugary mix into a 9X13 pan and set aside.
Combine the eggs, cream,extracts and salt in a bowl. Place the bread pieces on top of the “caramel” sauce, then pour the egg mixture over the bread slices. Cover and refrigerate at least 8 hours, overnight is better.
Preheat oven to 375 degrees. Bake toast for 35-45 minutes.
So delicious and the orange was a nice little flavor enhancer!
